Egg-n-Veggie Scramble

I love this after a great workout. It’s so yummy and healthy too. You can throw in whatever vegetables you want. I always improvise with what’s in the fridge.


  • 3 Eggs (or 1 egg and 2 egg whites)
  • 1/4 cup sliced red onion
  • 1 cup fresh spinach
  • 1/2 red/yellow pepper
  • 1 oz cheese cubed
  • 2 roma tomatoes
  • Salt and Pepper to taste

Mix the eggs together and add the cheese cubes into the bowl. Add the onion and peppers to the pan to sauté for a couple minutes. You just want to soften up the peppers a bit. Add all the other ingredients. Cook until eggs are solid and cheese has melted.
